Fundamentally, condensation happens when there's a lot of moisture in the air, and then that air becomes cool enough to lose that moisture. So, the most straightforward way of preventing condensation is to climate-control your garage, especially in the winter. Installing a heater can remove a lot of headaches - although it will increase your energy usage.

Again, this is a straightforward solution. A mechanical dehumidifier will help keep the air in your garage dry, preventing condensation from forming. However, like climate control, this will increase energy costs.
Vapor barriers are specifically designed to prevent moisture from traveling into a building, so installing them on your walls or floor can do a lot to mitigate condensation problems. However, they can be difficult to maintain. Also, never install a vapor barrier in the ceiling - it will just trap moisture in.
When washing vehicles, keep them outside and allow them to dry fully before bringing them into the garage. A wet vehicle carries a lot of moisture, and if it dries off within the garage or shop, that's all going to transfer into the atmosphere - making condensation much more likely.
